1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup pineapple juice

1/2 cup BBQ sauce (your favorite brand)

1/4 cup soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon cornstarch

1 tablespoon water

1 tablespoon vegetable oil

Salt and pepper, to taste

1/4 cup green onions, chopped (for garnish)

1/4 cup sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine pineapple juice, BBQ sauce, soy sauce, honey, minced garlic, and grated ginger. Whisk together until well blended. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

    Prep the Sauce: In a small saucepan, combine any leftover marinade (not including the chicken) and bring it to a gentle simmer over medium heat. In a separate bowl, mix cornstarch with water to create a slurry. Once the marinade is simmering, slowly whisk in the cornstarch slurry and cook until the sauce thickens (about 2-3 minutes). Remove from heat and set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken pieces from the marinade and season with salt and pepper. Add the chicken to the skillet in a single layer, ensuring not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally until golden brown and cooked through.
