Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, julienned or spiralized

1 bell pepper (any color), sliced thinly

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons Sriracha

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

2 tablespoons vegetable oil (for cooking)

1 tablespoon sesame oil

Sesame seeds (for garnish)

Fresh cilantro (optional, for garnish)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine the chicken pieces with 1 tablespoon of soy sauce, 1 tablespoon of Sriracha, and 1 teaspoon of honey. Mix well and let it marinate for at least 15 minutes, or up to an hour if you have time.

      Prepare the Sauce:

        - In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, 1 tablespoon Sriracha, 1 tablespoon honey, and rice vinegar. Set aside.

          Sauté the Chicken:

            - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, carefully add the marinated chicken pieces. Stir-fry for about 5-7 minutes or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
