1 teaspoon sesame oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

1/4 cup breadcrumbs

For the Sauce:

1/2 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1 teaspoon cornstarch mixed with 1 tablespoon cold water

For the Noodle Bowl:

8 ounces rice noodles (or your choice of noodles)

2 cups mixed vegetables (bell peppers, carrots, snap peas)

2 green onions, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine ground pork (or chicken), grated ginger, minced garlic, chopped green onions, soy sauce, hoisin sauce, sugar, sesame oil, salt, black pepper, beaten egg, and breadcrumbs. Mix until well combined.

      - Form the mixture into small meatballs (about 1-inch in diameter) and place them on a baking sheet lined with parchment paper.

        Bake the Meatballs:

          - Preheat the oven to 400°F (200°C). Bake the meatballs for 15-20 minutes, or until they are cooked through and golden brown.

            Make the Sauce:

              - In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Bring to a simmer.

                - Stir in the cornstarch mixture to thicken the sauce. Allow it to simmer for another minute until it reaches the desired consistency.

                  Cook the Noodles:

                    - While the meatballs are baking, cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.

                      Sauté the Vegetables:

                        - In a large skillet, heat a splash of oil over medium-high heat. Add the mixed vegetables and stir-fry until tender-crisp, about 3-4 minutes. Season with a pinch of salt and pepper.

                          Assemble the Noodle Bowl:

                            - Divide the cooked noodles among serving bowls. Top with sautéed vegetables and meatballs. Drizzle the sticky ginger sauce generously over the top.

                              Garnish and Serve:

                                - Sprinkle with sliced green onions and sesame seeds before serving. Enjoy your flavorful and savory Sticky Sweet Ginger Meatball Noodle Bowl!
