Stuffed Cabbage Rolls with Tomato Sauce

1 large head of green cabbage

1 cup of long-grain rice, uncooked

1 pound ground beef (or turkey for a healthier option)

1 small onion, finely chopped

2 cloves garlic, minced

1 carrot, grated

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt

2 cups beef or vegetable broth

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 tablespoon olive oil

1 tablespoon brown sugar

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and gently place the whole head into the boiling water. Blanch for about 3-5 minutes until leaves are pliable. Remove the cabbage and let it cool. Once cool enough to handle, gently peel off 12-15 leaves.

    Prepare the Filling: In a skillet, heat olive oil over medium heat. Sauté the chopped onion and garlic until translucent. Add grated carrot and cook for another 2 minutes. In a large bowl, combine ground beef, cooked rice, sautéed vegetables, paprika, thyme, black pepper, and salt. Mix thoroughly until well combined.

      Stuff the Cabbage Rolls: Take a cabbage leaf and place about 2-3 tablespoons of the filling at the base of the leaf. Fold the sides inwards over the filling, then roll it towards the top to enclose the filling completely. Place the roll seam side down. Repeat with remaining leaves and filling.

        Prepare the Sauce: In a large pot, combine crushed tomatoes, tomato paste, brown sugar, and broth. Stir well and let it simmer for 5 minutes. Taste and adjust seasoning if necessary.

          Cook the Cabbage Rolls: Preheat your oven to 350°F (175°C). In a large baking dish, spread a thin layer of the tomato sauce on the bottom. Arrange the stuffed cabbage rolls in a single layer in the dish, seam-side down. Pour the remaining sauce over the rolls, ensuring they're well covered. Cover the dish tightly with aluminum foil.

            Bake: Place the baking dish in the preheated oven and bake for 1 hour. After 1 hour, remove the foil and bake for an additional 15 minutes to allow the tops to brown slightly.

              Serve: Remove from the oven and let it sit for 10 minutes before serving. Garnish with fresh parsley if desired. Serve warm with some crusty bread or a side salad.
