Summer Fruit Spring Rolls

Ingredients
  

8 rice paper wrappers

1 cup strawberries, hulled and sliced

1 cup mango, peeled and diced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 cup shredded coconut (unsweetened)

1 ripe avocado, sliced

Fresh mint leaves

1 tablespoon honey or agave syrup (optional)

Water for softening rice papers

Instructions
 

Prepare the Ingredients:

    - Wash and slice all the fruits as described. Keep them in separate bowls for easy assembly.

      Soften Rice Paper:

        - Fill a shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds, or until it becomes soft and pliable. Carefully lay it flat on a clean surface.

          Assemble the Spring Rolls:

            - Start layering your fillings. Place a few slices of each fruit in the center of the rice paper, add a couple of mint leaves, and a slice of avocado. If desired, drizzle a little honey or agave syrup on top of the fillings.

              Roll the Spring Rolls:

                - Fold the sides of the rice paper inwards over the filling. Starting from the bottom, roll the wrapper tightly but gently to encase the fruit. Make sure the filling is securely enclosed within the wrapper. Repeat with the remaining wrappers and fillings.

                  Serve:

                    - Arrange the spring rolls on a platter. You can serve them as is or with a dipping sauce. A simple mixture of lime juice and honey works beautifully as a refreshing dip!
