1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (or honey)

1/2 cup milk (dairy or plant-based)

1/4 cup vegetable oil (or coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup chopped walnuts or chocolate chips (optional)

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly or lining it with paper liners.

    Mix dry ingredients: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar (or honey), baking powder, baking soda, salt, and ground cinnamon. Mix well to ensure all dry ingredients are evenly distributed.

      Blend wet ingredients: In another bowl, whisk together the mashed bananas, milk, oil, eggs, and vanilla extract until smooth and well combined.

        Combine wet and dry: Pour the wet ingredient mixture into the bowl with the dry ingredients. Gently fold them together until just combined. Be careful not to overmix. If desired, add in the chopped walnuts or chocolate chips for added texture and flavor.
