Ingredients

1 cup semi-sweet chocolate chips

1 cup creamy peanut butter (smooth)

1/2 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

1/4 cup milk chocolate chips (for drizzling, optional)

Mini cupcake liners

Instructions

Prepare the Mold: Line a cupcake pan with mini cupcake liners, ensuring they fit snugly.

Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between until fully melted and smooth (about 1.5-2 minutes total).

Coat the Liners: Spoon a small amount of the melted chocolate into each mini cupcake liner, just enough to cover the bottom. Use a spoon to spread it evenly. Place in the freezer for about 10 minutes, or until firm.

Make the Peanut Butter Filling: In a medium bowl, mix the creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt until smooth and well combined.

Fill the Cups: Once the chocolate bases are firm, take them out of the freezer and scoop a tablespoon of the peanut butter mixture into each cupcake liner, leaving some space at the top (about 1/4 inch).

Top with Chocolate: Pour the remaining melted chocolate over the peanut butter filling, ensuring it's completely covered. Tap the cupcake pan gently on the counter to help the chocolate settle.

Drizzle (Optional): If using, melt the milk chocolate chips in a microwave-safe bowl. Once melted, use a fork to drizzle over the tops of the chocolate cups for an added decorative touch.

Chill and Set: Place the cupcake pan back in the freezer for about 30 minutes, or until the chocolate cups are set completely.

Serve and Enjoy: Once set, carefully peel the chocolate cups out of the liners and serve immediately. Keep leftovers in an airtight container in the fridge.
