Ingredients

1 cup oat flour

1/2 cup vanilla protein powder (or any flavor you prefer)

1/4 cup coconut sugar (or brown sugar)

2 tsp baking powder

1/2 tsp cinnamon (plus extra for coating)

1/4 tsp salt

2 large eggs

1/2 cup unsweetened almond milk (or regular milk)

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1/4 cup melted coconut oil (or butter)

1/4 cup granulated sugar (for coating)

1/2 tsp cinnamon (for coating)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray or coconut oil.

Mix Dry Ingredients: In a large bowl, whisk together the oat flour, protein powder, coconut sugar, baking powder, 1/2 teaspoon of cinnamon, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk the eggs, almond milk, applesauce, vanilla extract, and melted coconut oil together until smooth and fully blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix; it's okay if there are a few lumps.

Fill the Donut Pan: Using a piping bag or a zip-lock bag with the corner snipped, fill each donut mold about 3/4 full with the batter.

Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Donuts: Once baked, remove the donuts from the oven and allow them to cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Prepare the Coating: In a small bowl, mix the granulated sugar and 1/2 teaspoon of cinnamon together.

Coat the Donuts: Once the donuts are completely cooled, brush each one lightly with melted coconut oil and then roll them in the cinnamon-sugar mixture until evenly coated.

Serve and Enjoy: These protein-packed churro donuts are perfect for breakfast or a sweet snack. Enjoy them fresh or store them in an airtight container for up to 3 days!
