2 cups unsweetened shredded coconut

1 cup almond flour

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 teaspoon almond extract (optional)

1/2 cup whole almonds (for stuffing)

Extra shredded coconut (for rolling)

Prep the Mixture: In a large bowl, combine the shredded coconut, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, sea salt, and almond extract (if using). Mix thoroughly until all ingredients are well combined and you achieve a slightly tacky dough.

    Chill the Dough: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This helps the dough firm up and makes it easier to shape.

      Prepare the Almonds: While the dough is chilling, preheat your oven to 350°F (175°C). Spread the whole almonds on a baking sheet and bake for about 10 minutes until they are lightly toasted. Remove from oven and allow them to cool.

        Shape the Balls: Once the dough has cooled, take about a tablespoon of the mixture and flatten it in your palm. Place an almond in the center and wrap the dough around it, rolling it into a ball. Repeat this process with the remaining mixture and almonds.

          Coat the Balls: Pour extra shredded coconut into a shallow dish. Roll each coconut almond ball in the shredded coconut until fully coated. This gives them a beautiful, snowy appearance.
