Sweet Corn & Cucumber Salad

Ingredients
  

2 cups fresh corn kernels (about 4 ears of corn)

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped (or parsley for a milder flavor)

1 avocado, diced

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper, to taste

1/2 teaspoon chili powder (optional, for a kick)

Instructions
 

Prepare Corn: If using fresh corn, bring a large pot of salted water to a boil. Add the corn and cook for 4-5 minutes until tender. Drain and plunge into cold water to stop cooking. If using frozen corn, simply thaw it.

    Chop Vegetables: While the corn cools, dice the cucumber, halve the cherry tomatoes, and finely chop the red onion and cilantro.

      Combine Ingredients: In a large mixing bowl, combine the corn, diced cucumber, cherry tomatoes, red onion, and cilantro.

        Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and chili powder (if using). Pour the dressing over the salad and toss gently to combine.

          Add Avocado: Gently incorporate the diced avocado just before serving, being careful not to mash it.
