1 pound baby carrots (or sliced regular carrots)

3 tablespoons unsalted butter

1/4 cup pure maple syrup

1 tablespoon brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

2 tablespoons chopped fresh parsley (for garnish)

Optional: crushed walnuts for added crunch

Prep the Carrots: If using regular carrots, peel and slice them into uniform pieces about 1/4 inch thick. If using baby carrots, rinse and set aside.

    Boil the Carrots: In a medium-sized pot, bring water to a boil and add a pinch of salt. Carefully add the carrots and cook for about 5-7 minutes, or until they are tender but still crisp. Drain and set aside.
