2 medium sweet potatoes, peeled and diced

2 cups fresh kale, chopped (stems removed)

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

½ teaspoon ground cumin

¼ teaspoon red pepper flakes (optional, for heat)

2 tablespoons olive oil

Salt and pepper, to taste

½ cup vegetable broth or water

1 tablespoon lemon juice

¼ cup walnuts, chopped (optional for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they start to soften.

    Add Aromatics: Add the diced onion and red bell pepper to the skillet with the sweet potatoes. Sauté for an additional 5 minutes until the onion becomes translucent.
