2 medium sweet potatoes

1 cup rolled oats

2 cups almond milk (or milk of choice)

1 cup mixed berries (blueberries, strawberries, raspberries)

2 tablespoons maple syrup (or honey)

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 tablespoon chia seeds (optional)

1/4 cup chopped nuts (walnuts or almonds) for topping

Fresh mint leaves for garnish (optional)

Prepare the Sweet Potatoes: Begin by preheating your oven to 425°F (220°C). Wash the sweet potatoes thoroughly and poke a few holes in them with a fork. Place them on a baking sheet and roast for about 40-45 minutes or until they are tender when pierced with a fork. Remove from the oven and let cool slightly.

    Cook the Oats: In a medium saucepan, combine rolled oats, almond milk, cinnamon, and salt. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the milk.

      Prep the Berries: While the oats are cooking, rinse your mixed berries under cold water. If using strawberries, slice them into smaller pieces. You can also sprinkle a little lemon juice over the berries for added flavor.

        Mash the Sweet Potatoes: Once the sweet potatoes are cool enough to handle, slice them open and scoop the flesh into a bowl. Mash the sweet potato with a fork, then mix in the vanilla extract and maple syrup until well combined.

          Assemble the Bowl: In serving bowls, spoon a generous portion of the sweet potato mash at the bottom. Next, add a layer of the cooked oatmeal on top.
