1 lb sweet potatoes, peeled and cubed

1 lb smoked sausage (such as kielbasa or andouille), sliced into ½-inch pieces

1 red bell pepper, diced

1 yellow bell pepper, diced

1 red onion, chopped

3 cloves garlic, minced

4 tbsp olive oil

1 tsp smoked paprika

1 tsp dried oregano

1 tsp thyme leaves (fresh or dried)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large bowl, combine the cubed sweet potatoes, sliced sausage, diced bell peppers, chopped red onion, and minced garlic.

      Season the Mixture: Drizzle 4 tablespoons of olive oil over the mixture. Add the smoked paprika, oregano, thyme, salt, and black pepper. Toss everything together until well-coated.

        Arrange on Sheet Pan: Spread the mixture evenly on a large sheet pan in a single layer. Make sure there’s enough space between the pieces for even roasting.

          Roast in the Oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and the sausage is heated through and slightly crispy. Stir halfway through for even cooking.
