2 large sweet potatoes, peeled and cubed

1 cup cooked black beans, drained and rinsed

1/2 cup breadcrumbs (use gluten-free if desired)

1/4 cup diced red onion

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (optional, for a kick)

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese or vegan substitute (optional)

8 whole wheat slider buns

Avocado slices for topping

Lettuce and tomato slices for serving

Instructions
 

Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Mash and Combine Ingredients: In a large mixing bowl, mash the cooked sweet potatoes using a fork or potato masher until smooth. Add the black beans and mash until combined but still chunky.

      Season and Form Sliders: Stir in breadcrumbs, red onion, garlic, cumin, smoked paprika, chili powder, salt, pepper, cilantro, and optional feta cheese. Mix until everything is well combined. If the mixture feels too wet, add a bit more breadcrumbs.

        Shape Sliders: Form the mixture into small patties, about the size of your slider buns. You should get around 8 sliders.

          Cook the Sliders: Heat a non-stick skillet over medium heat. Lightly grease with olive oil. Cook the sliders for about 5-7 minutes on each side, or until golden brown and heated through.

            Assemble the Sliders: Slice the slider buns in half. Place a sweet potato slider on the bottom half, top with avocado, lettuce, and tomato slices. Crown with the other half of the bun.

              Serve: Serve warm with your favorite dipping sauce or a fresh salsa on the side.
