Ingredients

1 cup all-purpose flour

1 tablespoon brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 cup pumpkin puree (canned or fresh)

1 cup buttermilk (or milk + 1 tablespoon vinegar)

2 large eggs

2 tablespoons vegetable oil or melted butter

1 teaspoon vanilla extract

Maple syrup, for serving

Optional: whipped cream, pecans, or chocolate chips for topping

Instructions

Combine Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt until well blended. Make a well in the center of the dry mixture.

Mix Wet Ingredients: In a separate bowl, combine the pumpkin puree, buttermilk, eggs, vegetable oil (or melted butter), and vanilla extract. Whisk until smooth and fully combined.

Blend Mixtures: Pour the wet ingredients into the well of the dry ingredients. Gently mix until just combined; be careful not to overmix. The batter should be slightly lumpy, which is perfect for fluffy pancakes.

Preheat the Pan: Heat a large skillet or griddle over medium heat. Lightly grease with a bit of oil or cooking spray.

Cook the Pancakes: Pour approximately 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown on both sides.

Serve and Enjoy: Serve the pancakes warm with a drizzle of maple syrup. For extra indulgence, top with whipped cream, a sprinkle of pecans, or chocolate chips if desired.
