For the crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, cold and cubed

1/4 teaspoon salt

For the filling:

1 cup light corn syrup

3/4 cup brown sugar, packed

1/4 cup unsalted butter, melted

3 large eggs

1 teaspoon vanilla extract

1 ½ cups pecan halves (or chopped if preferred)

1 teaspoon sea salt (optional, for topping)

Instructions
 

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium-sized bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter, and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of a greased 9x13-inch baking pan. Bake for 15-20 minutes or until lightly golden. Allow to cool slightly.

    Make the Filling: In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth and well combined. Stir in the pecans until evenly distributed.

      Combine: Pour the pecan filling over the pre-baked crust, using a spatula to ensure it is evenly spread across the surface. Sprinkle with sea salt if desired.

        Bake: Return to the oven and bake for an additional 25-30 minutes or until the filling is set and slightly puffed. The center may still jiggle slightly but will firm up as it cools.

          Cool and Slice: Allow the pecan pie bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the edges of the parchment or grease, then slice into squares or bars.
