Taco Night: Easy Ground Turkey Tacos

1 lb ground turkey

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, finely diced (any color you prefer)

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

½ tsp salt

½ tsp black pepper

1 (15 oz) can black beans, rinsed and drained

1 cup corn (canned or frozen)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

Salsa, sour cream, and avocado slices for toppings

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

    Add Garlic & Bell Pepper: Stir in the minced garlic and diced bell pepper. Cook for another 2-3 minutes until the pepper softens.

      Cook the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through (about 5-7 minutes).

        Season the Mixture: Sprinkle the chili powder, cumin, paprika, salt, and black pepper over the turkey mixture. Stir well to combine and cook for another 2 minutes to allow the spices to develop flavor.

          Incorporate Beans & Corn: Add the rinsed black beans and corn to the skillet, mixing them into the turkey mixture. Cook for an additional 3-4 minutes until heated through. Take off the heat.

            Warm the Tortillas: In a separate skillet, warm the tortillas one at a time over medium heat for about 30 seconds on each side, or until pliable. You can also wrap them in foil and warm them in the oven at 350°F (175°C) for 10 minutes.
