Ingredients

1 lb ground turkey

1 cup breadcrumbs (preferably whole wheat)

1/2 cup finely chopped onion

1/2 cup shredded carrots

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 large egg

1/4 cup milk (any type)

1/4 cup BBQ sauce (plus extra for topping)

1 tsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp smoked paprika

Salt and pepper to taste

1 tsp olive oil (for sautéing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Sauté Veggies: In a small skillet, heat the olive oil over medium heat. Add the chopped onion and shredded carrots; sauté for about 5 minutes, or until softened. Add the minced garlic and cook for an additional 1-2 minutes. Remove from heat and let it cool slightly.

Mix Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumbs, sautéed vegetables, fresh parsley, egg, milk, BBQ sauce, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly incorporated. Avoid overmixing to keep the meatloaf tender.

Shape the Loaf: Transfer the mixture to a baking dish or a lined loaf pan. Shape it into a loaf form, ensuring it's even on the top and sides.

Add BBQ Topping: Spread an additional 1/4 cup of BBQ sauce evenly over the top of the meatloaf for a tangy glaze.

Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). The top should be caramelized and nicely browned.

Let it Rest: Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This will help the juices redistribute for a moist slice.

Serve: Slice the meatloaf and serve warm, drizzled with additional BBQ sauce if desired, alongside your favorite sides like mashed potatoes or steamed vegetables.
