Turkey Chili Pizza Bites for Lunch

1 lb ground turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 packet taco seasoning

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 cup cornmeal or polenta

2 cups water

1/2 cup shredded cheddar cheese

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Prep the Base: In a saucepan, bring 2 cups of water to a boil. Gradually whisk in cornmeal or polenta, stirring constantly to avoid lumps. Simmer for about 5 minutes until thickened. Remove from heat and allow to cool slightly.

    Cook the Turkey: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Add the Chili Ingredients: Mix in the drained kidney beans, diced tomatoes with chilies, and taco seasoning. Reduce heat to low, allowing the mixture to simmer for 10-15 minutes until flavors meld.

        Form Pizza Bites: Preheat your oven to 400°F (200°C). Grease a mini muffin tin. Spoon about 1 tablespoon of the cooled cornmeal mixture into each muffin cup, pressing down to form a small base. Then, add a tablespoon of the turkey chili mixture on top.

          Cheese It Up: Sprinkle a generous amount of shredded mozzarella cheese over each pizza bite, followed by a little sharp cheddar for extra flavor.

            Bake to Perfection: Place the muffin tin in the preheated oven and bake for 12-15 minutes until the cheese is bubbly and golden brown.
