Turkey Lettuce Wraps with Mango Glaze

1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons fresh ginger, grated

1 teaspoon soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1/2 cup mango puree (can be store-bought or homemade)

1 tablespoon lime juice

1 tablespoon honey

1/2 teaspoon chili flakes (adjust to taste)

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

Fresh cilantro, for garnish

Chopped scallions, for garnish

Crushed peanuts or cashews (optional, for crunch)

Instructions
 

Prepare the Mango Glaze: In a small saucepan over medium heat, combine the mango puree, lime juice, honey, and chili flakes. Stir well and let it simmer for about 5 minutes until it thickens slightly. Remove from heat and set aside.

    Sauté the Turkey Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.

      Add the minced garlic, diced red bell pepper, and grated ginger to the skillet. Sauté for an additional 2-3 minutes until fragrant.

        With the skillet still on medium heat, add the ground turkey to the mixture, breaking it up with a spatula. Season with salt and pepper. Cook until the turkey is browned and cooked through, about 6-8 minutes.

          Stir in the soy sauce, hoisin sauce, and rice vinegar, and cook for another 2 minutes, allowing the flavors to meld. Remove from heat.

            Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the turkey mixture into the center. Drizzle with the mango glaze.

              Add fresh cilantro and chopped scallions on top. If desired, sprinkle with crushed peanuts or cashews for added crunch.
