1 lb ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh lime juice

2 tablespoons fresh cilantro, chopped

For the avocado sauce:

1 ripe avocado

1 cup Greek yogurt or sour cream

1 lime, juiced

1 garlic clove, minced

Salt to taste

Water (to thin, if necessary)

For assembly:

8 small corn or flour tortillas

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Prepare the Turkey Filling:

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add Vegetables:

        Stir in the ground turkey, cooking until browned (about 5-7 minutes). After the turkey is cooked, add the diced red bell pepper, corn, and black beans. Mix thoroughly.

          Season the Mixture:
