Ingredients

2 (6 oz) salmon fillets, skinless

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

4 large whole wheat tortillas

1 cup fresh spinach leaves

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1 avocado, sliced

1/4 cup crumbled feta cheese (optional)

Fresh herbs (like parsley or basil) for garnish

Instructions

Marinate the Salmon: In a small bowl, mix together olive oil, lemon juice, Dijon mustard, minced garlic, oregano, thyme, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate in the refrigerator for at least 30 minutes.

Preheat the Grill: Preheat your grill or grill pan over medium-high heat.

Grill the Salmon: Once the grill is hot, remove the salmon from the marinade and place it directly onto the grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let it rest for a few minutes.

Prepare the Wraps: While the salmon is resting, lay out the whole wheat tortillas on a clean surface. Start layering fresh spinach leaves at the center of each tortilla, followed by halved cherry tomatoes, cucumber slices, red onion, and avocado.

Flake the Salmon: Once the salmon has cooled slightly, use a fork to flake it into pieces and distribute it evenly among the tortillas.

Finish with Feta: If desired, sprinkle crumbled feta cheese over the top for extra flavor.

Wrap It Up: Fold in the sides of each tortilla and then roll it up tightly from the bottom to the top. Secure with a toothpick if necessary.

Serve and Enjoy: Slice the wraps in half and garnish with fresh herbs. Serve with lemon wedges on the side for an additional zesty kick.
