Marinate the Chicken: In a medium bowl, whisk together lime juice, olive oil, minced garlic, ground cumin, chili powder, paprika, salt, black pepper, and lime zest. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Avocado Salsa: In another bowl, combine diced avocados, diced tomatoes, red onion, jalapeño (if using), and cilantro. Drizzle with lime juice and season with salt. Gently toss to combine and ensure the avocados stay intact. Set aside.

      Cook the Chicken: Heat a grill or grill pan over medium-high heat. Remove the chicken thighs from the marinade, allowing excess marinade to drip off, and grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks.
