Zucchini Broccoli Casserole

2 medium zucchinis, thinly sliced

2 cups fresh broccoli florets

1 cup cooked quinoa (or rice)

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (or homemade equivalent)

1/2 cup milk

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried basil

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with olive oil.

    Prepare the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced zucchinis and broccoli florets. Sauté for about 5-7 minutes, or until just tender. Remove from heat and set aside.

      Mix the Base: In a large mixing bowl, combine the cooked quinoa, cream of mushroom soup, milk, garlic powder, onion powder, dried basil, salt, and black pepper. Stir until well mixed.

        Combine Ingredients: Add the sautéed zucchini and broccoli to the mixing bowl, along with half of the shredded cheddar cheese. Mix everything together until the veggies are well coated in the creamy mixture.

          Assemble the Casserole: Transfer the mixture into the greased casserole dish and spread it evenly. Top with the remaining cheddar cheese and sprinkle with Parmesan cheese. If you desire extra crunch, you can add breadcrumbs on top.
