2 medium zucchinis, spiralized or sliced into thin ribbons

2 boneless, skinless chicken breasts, sliced into strips

2 cups heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning (oregano, basil, thyme blend)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for a kick)

Prepare the Zucchini: If you haven’t done so already, spiralize the zucchinis into noodles or slice them into thin ribbons. Set aside on a paper towel to remove excess moisture.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken strips with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese gradually, whisking continuously until the cheese melts and the sauce thickens (about 3-5 minutes). Season with additional salt, pepper, and red pepper flakes if desired.

        Combine Zucchini and Chicken: Add the spiralized zucchini and the chicken back into the skillet with the Alfredo sauce. Gently toss everything together, cooking for an additional 2-3 minutes until the zucchini is just tender but still retains some grip.
