Ingredients

2 medium zucchinis, grated and squeezed to remove excess moisture

1 cup rolled oats

1 cup almond flour

1/2 cup brown sugar (or coconut sugar for a healthier option)

1/4 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup mini chocolate chips or dried fruit (e.g., cranberries or raisins)

1/2 cup chopped nuts (optional, e.g., walnuts or pecans)

1/4 cup tangy cream cheese frosting (store-bought or homemade) for topping

Fresh fruits of your choice for garnish (e.g., banana slices, berries)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much excess moisture as possible (this is crucial for the texture).

Mix the Wet Ingredients: In a large bowl, combine the melted coconut oil, brownie sugar, maple syrup (or honey), and vanilla extract. Mix until well combined.

Combine the Dry Ingredients: In another bowl, whisk together the rolled oats, almond flour, baking soda, cinnamon, and salt.

Combine Wet and Dry Ingredients: Fold the dry ingredients into the wet mixture, then add in the grated zucchini. Stir until just combined. Be careful not to overmix.

Add Mix-Ins: Gently fold in the mini chocolate chips (or your choice of dried fruit) and chopped nuts if using.

Shape the Cookies: Use a spoon or cookie scoop to portion out the dough onto the prepared baking sheet, flattening each portion slightly with the back of the scoop or your fingers to form round “pizza” shapes. Leave enough space between each cookie as they will spread slightly while baking.

Bake the Cookies: Place in the preheated oven and bake for about 12-15 minutes or until the edges are lightly golden.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Top with Frosting: Once fully cooled, spread a layer of tangy cream cheese frosting over the top of each “cookie pizza.”

Garnish: Top with fresh fruit slices of your choice for extra flavor and decoration.

Serve: Slice into wedges like a pizza and enjoy!
