2 medium zucchinis, grated

1 cup crumbled feta cheese

1/2 cup all-purpose flour (or almond flour for a gluten-free option)

2 large eggs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

1/4 cup fresh parsley, chopped

Olive oil for frying

Lemon wedges for serving

Prep the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towel, twist, and squeeze to remove excess moisture. This step is crucial for achieving crispy fritters.

    Combine Ingredients: In a large mixing bowl, combine the grated zucchini, crumbled feta cheese, flour, eggs, green onions, minced garlic, oregano, salt, black pepper, red pepper flakes (if using), and chopped parsley. Stir until everything is well combined and forms a thick batter.

      Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat. You want enough oil to cover the bottom of the skillet to make sure the cakes fry evenly.

        Form the Cakes: Using about 1/4 cup of the mixture for each fritter, form small patties. Gently flatten them to about 1/2 inch thickness. Be careful not to overcrowd the skillet; you may need to do this in batches.
