Zucchini Noodles with Pesto and Cherry Tomatoes

4 medium zucchinis, spiralized into noodles

1 pint cherry tomatoes, halved

1 cup fresh basil leaves

1/4 cup pine nuts (or walnuts)

2 cloves garlic, minced

1/2 cup Parmesan cheese, grated (or nutritional yeast for a vegan option)

1/2 cup extra virgin olive oil

Salt and pepper, to taste

Optional: crushed red pepper flakes, for heat

Fresh basil leaves and Parmesan cheese for garnish

Instructions
 

Make the Pesto:

    - In a food processor, combine fresh basil leaves, pine nuts, minced garlic, and grated Parmesan cheese.

      - Pulse until coarsely chopped.

        - With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy.

          - Season with salt and pepper to taste. If you prefer a little heat, add a pinch of crushed red pepper flakes.

            Prepare Zucchini Noodles:

              - Spiralize the zucchinis into noodles using a spiralizer or a vegetable peeler.

                - Optionally, you can lightly salt the zucchini noodles and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.

                  Sauté Cherry Tomatoes:

                    - In a large skillet, heat a tablespoon of olive oil over medium heat.

                      - Add the halved cherry tomatoes and sauté for 3-4 minutes until they start to soften and blister. Season with salt and pepper.

                        Combine Zucchini Noodles and Pesto:

                          - Add the zucchini noodles to the skillet with the sautéed cherry tomatoes. Toss gently to combine and warm the noodles for about 2-3 minutes.

                            - Remove from heat and stir in the prepared pesto sauce until evenly coated.

                              Serve:

                                - Divide the zucchini noodles into bowls and top with additional fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.

                                  - Enjoy immediately while warm!
