2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or a drizzle of olive oil for roasting)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup and to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into 1/4-inch thick rounds. If your zucchinis are larger, you may want to halve them before slicing.

      Set Up the Breading Station: In one bowl, place the flour. In a second bowl, beat the eggs until well combined. In a third bowl, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and pepper.

        Bread the Zucchini: Take each zucchini slice, coat it in flour, then dip it into the egg mixture, and finally, coat it with the breadcrumb and Parmesan mixture. Make sure each slice is fully covered for the best crunch.

          Arrange on Baking Sheet: Place the breaded zucchini bites on the prepared baking sheet in a single layer. For a more golden color, spray or drizzle lightly with olive oil.

            Bake: Bake the zucchini bites in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

              Serve: Remove the bites from the oven and let them cool slightly. Garnish with fresh parsley before serving. Pair with marinara sauce or a yogurt dip if you like!
