Ingredients

3 medium zucchini, spiralized into noodles

1 cup cooked pasta (penne or rotini works well)

1 cup marinara sauce (homemade or store-bought)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Zucchini Noodles: Using a spiralizer, create noodles from the zucchini. Place the zucchini noodles in a colander and sprinkle lightly with salt to draw out excess moisture. Let them sit for about 15 minutes, then pat dry with paper towels.

Mix the Cheeses: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, oregano, basil, garlic powder, salt, and pepper. Mix until well combined.

Combine Ingredients: In a large baking dish, combine the cooked pasta and zucchini noodles. Pour in the marinara sauce and stir gently until everything is evenly coated.

Layer: Spoon the cheese mixture over the top of the noodle mixture, spreading it evenly. Then, sprinkle the remaining mozzarella and Parmesan cheese on top.

Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Cool and Serve: Allow the bake to cool for about 5-10 minutes before serving. Garnish with fresh basil leaves if desired.
